Century Egg Salad – Yam Khai Yiaw Ma – ยำไข่เยี่ยวม้า

This is one of my favourite spicy Salads, despite the funny color; I love its taste, the way how all the ingredients mixed. But I have to say this spicy dish is also well loved by my friends on party that they liked to have this spicy dish along with their drinks. If you are not that adventurous, you can also use the normal boiled instead of the Century Egg. Hope you enjoy it

Ingredients serves 2 Notes
Century Egg 2 pieces 5 minutes boiled, cut in small pieces
Mince Pork 3 tablespoon cooked
Fresh Shrimp 8 pieces peel and cooked
Chinese Celery 2 pieces clean and cut in 2 inches pieces
Shallot 3 pieces clean and slice thinly.
Thai Tomato 3 pieces clean and cut as you prefer
Salad Leave to garnish optional
Coriander leave to garnish optional

Sauce Ingredients Serves 2 Notes
Garlic 3 pieces clean and chop in small pieces
Chili 2 tablespoon or as you prefer cut in small pieces
Lime Juice 2 tablespoon
Fish Sauce 2 tablespoon
Sugar 1.5 tablespoon

How to make:

  1. First mix the sugar, lime juice and fish sauce together and gently stir until the sugar dissolved. You can taste the sauce and see it that it fits your own taste, but make sure it’s a strong flavour, because we will add the rest into the sauce later.
  2. Add garlic and chili to complete the sauce
  3. Add the cooked mince pork and cooked shrimp in the Salad Sauce.
  4. Arrange the Eggs on a plate with the Salad Leave, Chinese Celery, and Shallot and top it with our Spicy Salad Dressing, garnish with Coriander leave.
