Mince Pork Salad – Laab Mooh – ลาบหมู

In the olden days where there were no good connections between village and the town, no electricity or refrigerator and no supermarkets. Laab or mince meat salad was prepared only for the big family gatherings. For example the relatives came from far away to visit, to celebrate the end of the harvest season, the engagement, the funeral and etc. In those gatherings several close friends will be invited to help in the kitchen to make ground roasted chili and ground roasted rice and laab will be prepared in big quantity for everybody.

Now we can have any meat any day and laab is available everywhere and slowly losing its festival feels. Laab originated from North and Northeastern regions. We eat laab with a lot of fresh vegetables and sticky rice. There are some number of people, mostly hunters, still eat laab made with raw meat, but this is a big risk to get deadly parasites.

Ingredients Serves 2 Notes
Mince Pork 200 grams
Ground roasted rice 3 tablespoon
Ground roasted dried chili 2 tablespoon
Fish Sauce 1.5 tablespoon
Lime Juice 1.5 tablespoon
Shallot 4 pieces Peel, slice in thin pieces
Some Mint as reqd. clean and chop
Some coriander as reqd. clean and chop
Lime leave 1 piece thinly chop
Some Saw parley as reqd. clean, chop
Some fresh Chili about 2 tablespoon clean and chop

How to make:

  1. Add the mince meat in the pot with 1 teaspoon of salt and 2 tablespoon of water and bring to boil until the meat is cooked.
  2. Season with ground roasted chili, fish sauce, pieces of shallot and sliced lime leave.
  3. Squeeze the lime juice into the mixture and try the taste of the laab.
  4. When you get the good taste you prefer, which is the mixture of salty, spicy and sour, add the cut chili and ground roasted rice.
  5. The cut pieces of coriander and mint should add in the end because they will wilt too easily.
  6. Serve with fresh vegetables and steam sticky rice.

Tip: The ground roasted rice gives very special flavor in this laab. The homemade ground roasted rice is worth the affords because the bought one will not give u as good aroma. And they should be added just before serving, otherwise they will absorb the fluid and turn soggy.
