Stuffed Bitter Gourd Soup – Gaeng Jued Mara Yad Sai – แกงจืดมะระยัดไส้

I just realized that I love Bitter Gourd soup recently. It’s just that I have made three different kinds of this clear soup. The difference is only what I put into this clear soup. Today I got the Mince pork, pre-marinated with seaweed from Tesco. These kind of pre-marinated meat is available in most Supermarket in Thailand, if you cannot get one you can look up my other clear soup post with mince pork and follow the procedure and use it for the filling here as well. Like most of the clear soups, this is quite easy to do. Normally we will give small treat for young kids, who could eat bitter gourd soup, just to encourage them to different kind of vegetables.

 
Ingredients Serves 2 Notes
Pre-marinated Mince pork with Seaweed 300 grams
Bitter gourd Cross-cut the in 2 inch pieces and remove the seed, clean
Oyster Sauce 2 tablespoon
Soya Sauce 2 tablespoon
Coriander leaves Some chop fine for garnish( Optional)

How to make:

  1. Stuff the mince pork into the pieces of bitter gourd loosely because when cooked the minced pork will become a bit bigger.
  2. Boil 4 cups of water in the pot, when boiling add the oyster sauce into the soup.
  3. Add the pieces of stuffed bitter gourd into the pot.
  4. Season with soya sauce and let the soup simmer until the bitter gourd is soft.
  5. Try the taste, when you are satisfied, turn off the gas.
  6. On serving, garnish with chopped Coriander.
