Steamed Mushroom Salad – Goy Hed Fang – ก้อยเห็ดฟาง, ลาบเห็ดฟาง

This is the confirmation of my love for mushrooms. Today I got these really fresh straw mushrooms and this is how my mother liked them to be prepared. These Straw Mushrooms still contain their own aroma and sweetness after being steamed and the ingredients here is very similar to other Laab or mince meat salad. Some people will call this dish Laab Hed (Mushroom Laab), in Isaan dialect we call it Goy Hed Fang (Straw mushroom salad).

Ingredients serves 2 Notes
Straw Mushroom 400 grams clean well and cut in half and steam
Lime Juice app. 2 tablespoon
Fish Sauce 2 tablespoon
Ground roasted dried Chili 1.5 tablespoon
Ground roasted Rice ( Khao Kua or ข้าวคั่ว ) 2 tablespoon
Thai Parsley 2 tablespoon clean and chopped
Coriander 1 tablespoon clean and chopped
Shallot 2 tablespoon clean and chopped
Fresh Chili 1 tablespoon clean and cut
Salad leave optional for Garnish

How to make:

  1. Clean and cut all the ingredients and steam the mushroom with relatively high heat for 10 minutes.
  2. Put the cooked mushroom pieces in the mixing bowl, season with fish sauce, ground roasted chilli and lemon juice.
  3. Follow by the cut pieces of fresh herbs, cut pieces of fresh chilli and roasted rice at the last and mix well.
  4. Place the mushroom salad on the plate; decorate with salad leave and herbs on serving.
