Cowslip Flower Soup – แกงจืดดอกขจร

This is how I love to eat the cowslip flower, in the clear soup with mince pork. This soup is very easy to make and you still have the original taste of this flower. It is well loved among the kids too because the flower turn soft easily in the soup and they taste a bit sweet. An easy clear soup for the whole family is this one.

Ingredients Serves 2 Note
Mince Pork 100 grams Pre-marinated
Cowslip Flower 1 pack Made about 1.5 cup
Oyster Sauce 1 tablespoon
Soya Sauce 1 tablespoon
Crispy fried crushed garlic a few teaspoons for topping

How to make:

  1. Boil 3 cup of water in the pot, when the water is about to boil add the oyster sauce and soya sauce.
  2. Make small balls of marinated mince pork and drop in boiling water.
  3. When the meat balls are cooked they will swim up to the surface, you can check the taste of the soup.
  4. When you get the taste you prefer, add the cowslip flower into the boiling soup, close the cover for one minute and done.
  5. In serving bowl, add the crispy fried garlic on top of the soup before serving.
