Fried Chicken with Holy Basil – Pad Graprao Gai – ผัดกระเพราไก่

Pad Gaprao is what we will order for a quick lunch at the place where we have no idea how the food will be like and when we have no idea what to choose from. Because in this dish you will have meat, you can pick between chicken/pork/beef or seafood. And the Spiciness from Garlic and Chili, plus the smell of Holy basil will make this dish irresistible for most people. If you are really hungry you can order extra crispy fried Egg to go with this dish. This dish is normally a lunch for working people; I have never seen Pad Gaprao on any dining table in the Thai home, let alone in the fine Diners.

Ingredients serves 2 Notes
Minced Chicken 1 cup
Garlic 5 cloves
Chili 6 pieces
Holy Basil 1 cup
Kaffir Lime leave 2 leaves Leaves have to be shred
Vegetable oil 1.5 tbsp
Oyster sauce 1 tbsp
Soya sauce 2 teaspoon

Procedure
  1. Clean the garlic and chili, put both in mortar, and beat both together until become paste.
  2. Add vegetable oil into the pan, when warm add the paste; follow by the lime leave, when the paste give the smell add the minced chicken meat.
  3. Mix well; when the meat is half cooked add the oyster sauce and soya sauce and mix all well.
  4. When the meat is cooked add the holy basil, fry the leave shortly along with the meat and done!
